Mee Hoon Kueh Recipe


Hand-made Noodles Soup will be my all-time comfort food that makes me happy with just the thought of it (or as Hokkiens called it:  Mee Hoon Kueh.)

If you were to buy Mee Hoon Kueh at Food Courts/ Coffee-shops in Singapore, one bowl costs at least $3.50 with a few balls of minced meat, fried anchovies as well as an egg.

I prefer to make it at home as I love it with lots of vegetables as well as minced meat balls so I can add more to my liking!

Ingredient list for Noodle Dough (Serves 5)
- 300g of Plain Flour
- 1 teaspoon of Salt
- 1 Egg
- 2 tablespoon of Cooking Oil
- 140ml of water
The amount of water to be added actually depends on the size of your egg.
If your egg is bigger, you may add less water so that the dough would not be as watery.
If your egg is smaller, you may add more water.

Steps:
(1) Mix all ingredients together and knead until the dough is no longer sticky and you can roll it into a ball. Make sure to scrub the flour on the sides of the bowl! 
(2) Leave the dough to stand for 30 minutes and most importantly:
Make sure to cover it with a cling wrap as otherwise you will end up with hardened noodles!
(3) Whilst waiting for the dough to be ready, we can move on to prepare the soup base.

*Once ready to cook:
(1) Separate the Mee Hoon Kueh dough evenly into 5 portions
(2) Take one portion and use a roller to flatten it.
(3) Once flatten, cut out into square pieces.
(4) Make sure to pull the Dough into thinner pieces before putting into the soup

Ingredients for Mee Hoon Kueh Soup Base
- Three cloves of Garlic
- Three litres of water
- Three Chicken Stock Cubes
- Two Tablespoons of oil

Steps:
(1) Cut the Garlic into small pieces like the picture below
(2) Fry the Garlic with 2 tablespoons of oil
Tip: Add the Garlic first before adding the oil so that the oil does not splatter all over
(3) Add water after the garlic turns golden brown
(4) Add chicken stock cubes to the boiling soup
Then let's move on to preparation of the ingredients!

Other Ingredient list
(1) 400g of Chicken Breast
(2) 1 Valley Chef Hot Dog
(3) 1 Fairprice brand Imitation Crabsticks
(4) 5 Eggs
(5) Xiao Bai Cai Vegetables

Steps:
(1) Chop the Chicken breast into minced pieces
(2) Add 4 tablespoons of Sesame Oil
(3) Add 2 tablespoons of Soya Sauce
(4) Add a dash of salt, pepper and corn starch
Marinate it for half an hour. 
I like to make my Mee Hoon Kueh Separately instead of putting everything in a big pot.
(1) Pour out 600ml of Mee Hoon Kueh Soup Base to a small pot
(2) Turn on high heat and add the Mee Hoon Kueh
(3) Add the balls of minced chicken
(4) Add the hot dog pieces
(5) Add the vegetables and the imitation crabsticks
(6) Add the egg to the boiling soup
(7) Pour it into a bowl, add fried shallots and fried shallots oil
(8) Ready to be served with cut chillis!
